In 2003, Chef Nikolas Monts de Oca founded Global Infusion Corp., the parent company of AZ Inspirations Catering. Nikolas completed his Culinary Arts degree in 1999 from The Scottsdale Culinary Institute where he was trained in classic French cuisine. He is known in the industry as Chef Niko, a name given to him in culinary school.
Global Infusion’s name was born out of Chef Niko’s Serbian and Japanese heritage. His immigrant grandparents and their cultural diversity influenced him at an early age. Grandma Teruko was known for her Japanese cooking. His home was where Japanese rice, pickled ginger, and soy sauce were a household staple. Oftentimes they were cooked together with fresh ingredients from the local Asian market. Grandpa Nikola was a chef and restaurateur for over 50 years, which helped ignite his grandson’s entrepreneurial spirit. At a young age, Chef Niko’s family relocated from Miami, Florida to Albuquerque, New Mexico, where his love for Mexican food and southwest flavors was born.
Because of these influences and his passion for the art, he ventures out to infuse his recipes with flavors from around the globe. Chef Niko has created menus that incorporate ingredients from Europe, South America, North America, Asia, the Middle East, and the Mediterranean coastal region. His talent excels with his ability to creatively design menus that meet the demands of the ever-evolving culinary industry.
Chef Niko’s success comes from his love for food, dedication, and determination to create food that will mesmerize his clientele. His mission to please starts and ends with the needs of his clients. Customizing each menu, utilizing the freshest ingredients, and creating a tantalizing cuisine experience for every client contributes to their ultimate satisfaction. Chef Niko has mastered the catering industry’s complexities to ensure his menus are executed with impeccable timing resulting in his food always being cooked to perfection.
